Today’s writing prompt for blogmas was Christmas party food ideas. However, I am going to change it up a little bit and share with you the homemade treat that I made this year to take into work. It is really good and I’m so excited to share it with you all!
So I decided to make mini cheese balls. I honestly thought that it would be really hard. It wasn’t bad, except for the time consumption it takes because I had to coat so many. Sometimes, I just don’t have the patience to do some of these projects.
- 12 oz. cream cheese, softened
- 1 c. shredded cheddar
- 1 tsp. garlic powder
- 1 tsp. paprika
- 8 slices of bacon, cooked and chopped)
- 1/3 c. finely chopped fresh chives
- 1/3 c. finely chopped pecans
- Pretzel sticks
- In a bowl, you will need to mix together cream cheese, cheddar, garlic powder, paprika, salt, and pepper. You can roll these into 20 small balls. Put in the fridge for about an hour.
- In a small bowl, mix together cooked bacon, chives, and pecans.
- Roll balls in mixture and insert a pretzel into each ball.
- Serve to your party!
These actually turned out really well. I wish I had started working with softer cream cheese. It was still harder when I was trying to mix everything. I made these balls small enough to make 20 so that there would be an even number (because 5 of us work on holidays and weekends). I did this batch like the directions said– with all the ingredients. However, my personal preference would be to leave out the pecans. I’d love it if these were just bacon and chives in the outer layer. But everyone has their own taste. For the cheddar, I used mild shredded (although I debated with sharp shredded). I think the mild was a good idea! I also found that once I had them in the fridge and they got firm, the outer layer didn’t stick very well so I had to make sure they were squeezed in a little because mine had to be transported.
At the finish of the project, there is just one other thing that I would probably change a little further. I made my treats the night before I went to work (I love sleep, so I wasn’t about to wake up early for cooking). So, I would have waited to put the pretzel sticks in them. The sticks were pretty soggy by the time I got them to work. I also stored them in a baggie overnight (because I didn’t want them the cheeseballs to get dried out by being in open air in my fridge). So that wasn’t a big deal but maybe a deeper tray and plastic wrap to cover them instead of having to use a baggie. Then put in the pretzel right before serving.
